RUSTIC DUMPLINGS WITH RADICCHIO AND TYROL SMOKED HAM

As I promised, I prepared a special sauce for the traditional dumplings recipe.

Ingredients for 5 portions OF DUMPLINGS WITH RADICCHIO

 

Dumplings: 5 portions

Radicchio from Treviso: 1 head

Tyrol smoked ham: 100g

Cream: 200g

Oil

Salt

Onion (little size): ½

Smoked ricotta or parmesan

How to do it:

Brown the chopped onion with hot oil. Add radicchio strips and low the flame. When it’s cooked, add Tyrol smoked ham strips too. Take it off the ring. Add the cream ad purée most of the mixture.

Boil the dumplings until they surface. Serve with the radicchio sauce and some grated smoked ricotta or parmesan.

Some tips: do not sauté the dumplings with the sauce, or they could get squashed.

You can serve also the pasta with this sauce. Tagliatelle are perfect!
