CHARD AND RICOTTA DUMPLINGS
WITH TASTY AND VEGETARIAN SAUCES
Ingredients for 4 portions:
Boiled and squeezed chard: 500g
Flour: 180g (I used Molino Chiavazza flour)
Grated parmesan: 100g
Salt and pepper
How to do it
Wash and cook the chard on a low flame with a pinch of salt. Some minutes later strain, squeeze and chop it.
In a bowl mix ricotta, chard, flour, parmesan, egg, salt, pepper and nutmeg.
Put a pot on with water. When it starts boiling, dunk the dumplings you moulded using 2 spoons.
Strain them 1 minute after they surface.
– I prepared two different sauces: browned bacon + grated parmesan and melted butter + sage.
– My aunt’s secret: replace the chard with boiled zucchini. First try and then trust!
