Home made potatoes gnocchi – italian recipe
Ingredients for 5 portions
1,2 kg potatoes
400g plain flour
- Bring a large pot of water to the boil. Clean and peel potatoes and add to pot. Cook until tender but still firm, about 15 minutes. Mash with a fork or potato masher. Combine mashed potato with the egg and after mix it with the other ingredients in a large bowl. Knead until dough forms a ball. If you need you can use other flour during this step.
- After 3-4 minute dough will be compact, now you have to taste it to understand if the salt is sufficient or must be added another pinch
- Shape small portions of the dough into long “snakes”. On a floured surface, cut snakes into 1,5 cm pieces.
- Bring a large pot of lightly salted water to the boil. Drop in gnocchi and cook for 3 to 5 minutes or until gnocchi have risen to the top; choose the favourite sauce and served gnocchi with it!
In the classic recipe we serve gnocchi with smoked ricotta and parmesan flakes and butter melted; But they are also perfect with meat sauce, tomato sauce and basilico or, for a summer version, with pesto sauce.
