Home made potatoes gnocchi – italian recipe

Ingredients for 5 portions

1,2 kg potatoes

Olive oil

Salt

400g plain flour

1 egg

Directions

  1. Bring a large pot of water to the boil. Clean and peel potatoes and add to pot. Cook until tender but still firm, about 15 minutes. Mash with a fork or potato masher. Combine mashed potato with the egg and after mix it with the other ingredients in a large bowl. Knead until dough forms a ball. If you need you can use other flour during this step.
  2. After 3-4 minute dough will be compact, now you have to taste it to understand if the salt is sufficient or must be added another pinch
  3. Shape small portions of the dough into long “snakes”. On a floured surface, cut snakes into 1,5 cm pieces.
  4. Bring a large pot of lightly salted water to the boil. Drop in gnocchi and cook for 3 to 5 minutes or until gnocchi have risen to the top; choose the favourite sauce and served gnocchi with it!

Some tips

In the classic recipe we serve gnocchi with smoked ricotta and parmesan flakes and butter melted; But they are also perfect with meat sauce, tomato sauce and basilico or, for a summer version, with pesto sauce.
