Basmati rice with vegetables and tuna – 330 kcal for portion – italian recipe

Ingredients for 4 portions 

250 gr basmati rice (if you want you can mix it with a bit of black basmati rice)

3 zucchini (medium size)

1 onion

4 big carrots

160 gr cannede Tuna

Soya sauce

Olio EVO

Salt and paprika.

How to do it

 In a medium saucepan, bring water to a boil. Salt and put in the basmati rice. Turn heat to low, cover, and simmer for the time indicated on the carton.

Sliced thinly  ​​zucchini and carrots after washing;

In a wok (or in a deep frying pan) heat a little olive oil and, when hot, add in the onion (into small pieces);

A minute after add vegetables and cook for a few minutes without lid;

Continue cooking for 4-5 minutes covering it;

Now you can add basmati rice, tuna, soya sauce, salt and a bit of paprika. Toss to combine. Serve at room temperature or cold.

Some tips

If you want a particular presentation you can use brown rice or jasmine brown rice;

Instead of using the tuna can add an eggplant and pepper (to which you have raised the skin) and get a fresh plate and completely vegetarian. Instead you can make the chunks of chicken and burn it in a wok between the 3rd and 4th step of the procedure;

If you serve it at home council to serve you even hot but is perfect too served cold for a picnic.
